It’s a stop motion video. They moved the paper bit by bit and took a picture every little bit. Then they combined all the pictures into a video.

They basically folded a fold a tiny bit, then a little bit more, then a bit more, etc. taking a picture each time.

In some cases where the paper looks like it would flip back I think they held the edge down with their finger and Photoshopped it out of the picture later.

There is a fantastic animation on YouTube of an origami paper crane being created and taking flight. But can anyone tell me where the background music comes from. It sounds like something the Corrs might have done – hyperactive Celtic rock!
